Paloma and Daddy loves these, in fact my mums loves them as well. Paloma is at the moment 13 months and is starting to break up the pieces to put in her mouth. But obviously I have to keep an eye on her!
Makes 12 muffins
2 cups of grated cheese – either medium or mature
1 1/2 cups self-raising flour – I use the metal measuring cups, pictured. It fits exactly to the recipe
pinch of paprika
1 egg
1 cup milk
Chopped up ham – I am using the chopper that came with the blender at the mo. I will chop bigger pieces when I am more confident that Paloma can handle it.
You can use other ingredients – such as herbs, but becareful with changing the consistency 

Mix egg and milk in a measuring jug
Mix together all the dry ingredients in a bowl along with the ham.
Add the egg and milk and fold in gently to a nice and lumpy consistency
Spoon mixture into a tray. I have been using this red silicone trAy. I find it much easier, the muffins just slide out. I use two trays of six as the mixture is for 12 muffins. Eliminating greasing the tins situation.
Bake at 200 C/Gas 6 for 15 mins until firm and golden brown. However, with the rubbish overn I have, old skool and no fan in sight – it takes 25 mins. Leave to cool for a few minutes before taking out of the tray. Suitable for freezing.
